FOODIE FAVES...

Must try recipes for every palate
​Courtesy of Chef Bear - Mediterranean Shrimp Pasta

12 oz fresh (store-bought) Fettuccini
1 lb Shrimp
10 halved San Marzano tomatoes (or Cherry tomatoes)
1 tbsp capers
1/2 cup diced small onion
1/4 tsp Anchovy paste
2 cloves minced garlic
1/2 cup Mozzarella pearls
½ cup Arugula packed
4 oz Olive oil
Grated fresh Parmesan to taste
Salt and pepper to taste
Red pepper flake (if you want a little heat)

Yield: 2 servings, Prep time: 10 Mins, Total time: 20 mins

Prepare your pasta per package instructions and set aside. In a large sauté pan over medium-high heat, add the olive oil, onions, garlic, capers, and anchovy paste, stirring frequently. Add salt and pepper to taste. As the onions become translucent, add the tomatoes and shrimp. The shrimp will become pink and firm while the tomatoes begin to break down from the heat. Add a pinch of red pepper flake if you like a lil' kick. Add the fresh pasta, arugula, and Mozzarella pearls to the pan and toss well to mix all ingredients together. The arugula will wilt slightly, and pearls become soft but retain shape. They should not be fully melted. Serve immediately and grate Parmesan to your liking. Buon appetito!
